Recipe - Eastern North Carolina-Style Barbecue Sauce


This isn't the sticky heavy stuff you buy in bottles at the grocery store.  This is a thin, sweet/sour, and HOT barbecue sauce that is only served in North Carolina.  The jury's still out on whether or not the best sauce has ketchup in it, but the vinegar and hot sauce are standard ingredients.  Try it sometime!  It livens up your sliced chicken or pulled pork sandwich in the most interesting way. Eastern NC-Style Barbecue Sauce

Ingredients

1 cup cider vinegar
1 1/2 teaspoons salt
3/4 teaspoon cayenne pepper
1 teaspoon red pepper flakes
2 tablespoons brown sugar
1/4 teaspoon (about 5 drops) hot pepper sauce

Procedure

Heat to simmer in small saucepan.  Refrigerate and let it sit for at least three hours before serving.  Typically served on the table in a plastic funnel spout squeeze bottle.
