Recipe - Grilled Tilapia With Fajita-Style Rub


We like to grill fish as often as possible.  It's best if we can catch our own.  Beaver used to bring home lots of whiting and pompano, but over the years he hasn't had time to fish as often.  Hopefully we'll make the time for that now that we're living in Florida again.

Winn-Dixie recently had a BOGO offer on frozen grouper filets.  I used the rub and we chunked the grilled fish for fish tacos.  They were absolutely amazing!  I haven't seen the grouper lately so I have been buying the BOGO tilapia filets.

The rub is an adaptation of a fajita seasoning mix I like to keep on hand.  That recipe is here.

Grilled Tilapia With Fajita-Style Rub

Ingredients

2 pounds tilapia filets (or grouper, whiting, pompano, whatever your favorite fish is)
1 tablespoon chili powder
2 teaspoons salt
2 teaspoons paprika
2 teaspoons sugar
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes

Procedure

If fish filets are frozen, thaw them first.  Mix together the seasonings and gently pat and rub the mixture on the fish filets.  Cover dish and let stand in the refrigerator for an hour before grilling.  Grilled fish can be cut into strips or chunks to use in fish tacos.
