Recipe - Fresh Tomatillo and Tomato Salsa
My dear daughter-in-law made a really fresh tasting salsa for us one winter when she and my son came up to Fort Wayne to visit us for Christmas. Princess is a pretty easy going girl so she didn't complain when she had to process the ingredients in spoonful-sized batches since I didn't own a standard size food processor. It was Christmas after all. Her festive smile never faltered, not even when I couldn't find the stopper and she had to use her hand to cover the holes in the top of the plastic processor bowl. That was the year I made a special drink in her honor, to sort of smooth things over. It's called Crystal Meth and I'll give you that recipe another time.
Fresh Tomatillo and Tomato Salsa
Ingredients
4 to 6 tomatillos, husked and rinsed and cut into chunks
2 small tomatoes, cut into chunks and seeded
1 small red onion, quartered
3 or 4 jalapeno, serrano or other hot peppers, seeded and cut into chunks
4 cloves garlic, peeled
2 tablespoons lime juice
2 tablespoons fresh cilantro leaves
1/4 teaspoon salt
Procedure
Put all ingredients in a food processor and pulse a few times to chop. For best flavor, refrigerate for an hour or so.
